For the Casserole
  • 1 pound Ground Beef or lean ground turkey/chicken
  • 2 medium Zucchini fresh, sliced
  • 8 ounces Cream Cheese or suitable cream cheese alternative
  • 2 large Eggs no substitutions
  • 1 cup Cheddar Cheese more cheese can be added on top
For Cooking
  • 1 tablespoon Olive Oil or another cooking oil
  • 1 teaspoon Garlic Powder or fresh minced garlic
  • 1 teaspoon Onion Powder or fresh onions
  • to taste Salt
  • to taste Pepper

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, about 6-8 minutes. Drain excess fat and season with garlic powder, onion powder, salt, and pepper.
  3. Sauté the zucchini slices in the same skillet until tender, about 5 minutes.
  4. In a bowl, beat the eggs, then add the cream cheese and half of the cheddar cheese. Mix until smooth.
  5. Grease a 9x13-inch baking dish. Layer half the zucchini, then the beef, followed by the remaining zucchini. Pour the cheese mixture on top and sprinkle with the rest of the cheddar cheese.
  6. Bake for 25-30 minutes, until cheese is melted and golden brown.
  7. Let cool for 5 minutes before slicing and serving warm.
