Preparation Steps
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, about 6-8 minutes. Drain excess fat and season with garlic powder, onion powder, salt, and pepper.
- Sauté the zucchini slices in the same skillet until tender, about 5 minutes.
- In a bowl, beat the eggs, then add the cream cheese and half of the cheddar cheese. Mix until smooth.
- Grease a 9x13-inch baking dish. Layer half the zucchini, then the beef, followed by the remaining zucchini. Pour the cheese mixture on top and sprinkle with the rest of the cheddar cheese.
- Bake for 25-30 minutes, until cheese is melted and golden brown.
- Let cool for 5 minutes before slicing and serving warm.
