- Soak cedar planks in water for at least 30 minutes and up to 2 hours.
- Combine soy sauce, rice vinegar, olive oil, balsamic vinegar, lime juice, minced garlic, grated ginger, sesame oil, and honey in a medium bowl. Whisk until well blended.
- Place salmon fillets in a zip-top bag, pour the marinade over, seal, and refrigerate for 30 minutes.
- Preheat grill to medium-high heat (375°F).
- Remove cedar planks from water, pat dry, and place marinated salmon on the plank skin-side down.
- Place the prepared cedar plank with salmon on the grill and close the lid. Grill for 10 to 15 minutes.
- Remove cedar plank from grill, let salmon rest for a few minutes, and garnish with fresh dill and lemon slices if desired.
