Preparation Steps
  1. In a mixing bowl, combine rolled oats, chia seeds, ground cinnamon, nutmeg, and a pinch of salt. Whisk until well incorporated.
  2. Add oat milk, maple syrup, vegan cream cheese (or yogurt), vanilla bean paste, and grated carrots to the dry mixture. Fold the ingredients together gently.
  3. Divide the creamy mixture evenly into two glass jars. Seal tightly and refrigerate for at least 6 hours or overnight.
  4. The next morning, give the jars a good stir. Add a splash of oat milk if desired.
  5. Top your oats with plant-based yogurt, shredded carrots, and chopped nuts for added flavor and texture.
