Method
 

Step-by-Step Instructions
  1. Wash the apricots thoroughly, pit, and chop them into small pieces.
  2. In a saucepan, combine water, crushed cardamom pods, and sugar. Heat until sugar dissolves.
  3. Bring the mixture to a gentle simmer to infuse the cardamom for about 5-7 minutes.
  4. Cool the cardamom syrup to room temperature.
  5. Blend the apricots, cooled syrup (remove the pods), lemon juice, and salt until smooth.
  6. Taste the mixture and adjust sweetness or acidity as necessary.
  7. Refrigerate the mixture for 2 hours.
  8. Churn the mixture in an ice cream maker according to instructions for 20-30 minutes.
  9. Transfer to an airtight container, smooth the top, and freeze further.
  10. Freeze for 4-6 hours until firm and serve garnished with mint or pistachios.
