  • 1 teaspoon Smoked Paprika or regular paprika

For the Avocado Lime Crema
  • 2 ripe Avocados
  • 1/2 cup Sour Cream or Greek Yogurt Greek yogurt is healthier
  • 2 tablespoons Fresh Lime Juice freshly squeezed
  • 1/4 cup Chopped Cilantro or parsley
  • 1 clove Minced Garlic or garlic powder
  • 1/4 teaspoon Cayenne Pepper optional
  • to taste tablespoons Water to adjust consistency
For Serving
  • 2 cups Rice white, brown, or cauliflower
  • 1 can Black Beans or lentils for substitution
  • 1 cup Corn Kernels
  • 1 cup Chopped Red Onion
  • 1 cup Diced Tomatoes
  • 4 tortillas Tortillas corn or flour
  • 2 cups Shredded Lettuce

Step-by-Step Instructions
  1. Begin by patting the salmon fillets dry to ensure seasonings adhere.
  2. In a small bowl, combine Cajun seasoning, olive oil, lemon juice, garlic powder, smoked paprika, salt, and pepper. Rub this mixture over salmon fillets.
  3. Cook the salmon skin-side down in a heated skillet for 4-5 minutes or bake at 400°F for 12-15 minutes.
  4. Let the salmon rest for 5 minutes before serving.
  5. Blend ripe avocados, sour cream or Greek yogurt, lime juice, cilantro, minced garlic, and optional cayenne until smooth.
