Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Spread frozen hash browns on the prepared baking sheet, drizzle with olive oil, season with salt and black pepper, and bake for 20 minutes, flipping halfway through.
  3. Heat a skillet over medium heat, add chopped bacon and sauté for 6-8 minutes until crispy. Remove and set aside.
  4. In the same skillet, melt butter, crack in eggs, and cook to preference, seasoning with salt and pepper.
  5. In a double boiler, whisk together egg yolks, Dijon mustard, and white wine vinegar for about 2 minutes. Gradually add melted butter while whisking until creamy and smooth. Finish with lemon juice, cayenne pepper, and garlic powder.
  6. Layer crispy hash browns on plates, add cooked eggs, sprinkle bacon, and top with cheddar and mozzarella cheese.
  7. Drizzle hollandaise sauce over the dish and serve hot.
