Preparation Steps
- Preheat your oven to 200°C (400°F). Line baking sheets with parchment paper.
- Roll out the puff pastry to 1/4 inch thickness and cut uniform circles, then prick them with a fork.
- Brush the tops of the pastry rounds with beaten egg and bake for 15–20 minutes until golden brown.
- In a saucepan, combine blueberries, sugar, lemon juice, and water. Cook until blueberries soften, about 5–7 minutes.
- Mix cornstarch with a bit of water to create a slurry, then add to the blueberry mixture and cook until thickened.
- Whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form, about 3–5 minutes.
- Assemble by layering pastry, cream, blueberry compote, and repeat, finishing with a pastry layer.
- Pipe whipped cream on top, sprinkle with blueberries, drizzle with blueberry compote, and dust with powdered sugar before serving.

Notes
For best results, prepare components in advance but assemble just before serving to maintain texture.
