  • 2 medium Pears Sprinkled with lemon juice
  • 4 oz Blue Cheese Can substitute with Gorgonzola Dolce
  • 1/2 cup Pecans Toasted
  • 1 tbsp Fresh Thyme For garnish

  • 2 tbsp Honey Drizzle for sweetness
  • 1 tbsp Lemon Juice To treat pear slices

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400 °F (200 °C). Prepare a baking sheet lined with aluminum foil.
  2. Wrap each beet in aluminum foil and roast for 45–60 minutes until fork-tender. Let cool.
  3. Peel and slice the roasted beets into 1/4 inch thick rounds.
  4. Slice pears into thin rounds and drizzle with lemon juice.
  5. On a serving platter, layer a slice of beet, a slice of pear, and crumbled blue cheese. Repeat.
  6. Sprinkle toasted pecans and fresh thyme on top.
  7. Optional: Drizzle with honey just before serving.
