- Preheat your oven to 400 °F (200 °C). Prepare a baking sheet lined with aluminum foil.
- Wrap each beet in aluminum foil and roast for 45–60 minutes until fork-tender. Let cool.
- Peel and slice the roasted beets into 1/4 inch thick rounds.
- Slice pears into thin rounds and drizzle with lemon juice.
- On a serving platter, layer a slice of beet, a slice of pear, and crumbled blue cheese. Repeat.
- Sprinkle toasted pecans and fresh thyme on top.
- Optional: Drizzle with honey just before serving.
