Ingredients

  • 1 cup Pumpkin Puree use canned or fresh
  • 1/4 cup Milk almond or oat milk for dairy-free
  • 1/4 cup Vegetable Oil can substitute with melted coconut oil
  • 1 cup All-Purpose Flour or whole wheat flour for added fiber
  • 1/2 cup Brown Sugar light brown or coconut sugar works too
  • 1 tbsp Pumpkin Pie Spice or mix cinnamon, ginger, and nutmeg
  • 1 tbsp Baking Powder ensure it's fresh
  • 1 tsp Cinnamon adjust to taste
  • 1/2 tsp Salt
  • 1/4 tsp Nutmeg or substitute with more cinnamon
For the Coating
  • 1/2 cup Granulated Sugar adjust for preference
  • 3 tbsp Butter (melted) or substitute with oil

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and coat a donut pan with non-stick spray.
  2. In a medium mixing bowl, whisk together the pumpkin puree, brown sugar, vegetable oil, and milk until smooth.
  3. In another bowl, mix the all-purpose flour, baking powder, pumpkin pie spice, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Fill each cavity of the prepared donut pan with the batter about 2/3 full.
  6. Bake the donuts for 15–16 minutes, until a toothpick comes out clean.
  7. Let the donuts cool in the pan for 10 minutes before transferring them to a cooling rack.
  8. While cooling, melt some butter and mix granulated sugar and cinnamon for the coating.
  9. Once cooled, brush or dip each donut in melted butter and roll in the cinnamon sugar mixture.
