Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) to ensure even baking.
  2. Thoroughly wash and drain the fresh spinach or prepare thawed and drained frozen spinach.
  3. Melt 2 tablespoons of butter in the skillet over medium heat. Add minced garlic and sauté for about 1 minute until aromatic.
  4. Gradually add the spinach and sauté until wilted, about 2-3 minutes. Season with salt and pepper.
  5. Lower the heat, stir in heavy cream, lemon zest, lemon juice, and nutmeg. Simmer for 2-3 minutes until slightly thickened.
  6. Mix in Parmesan cheese until melted and well combined. Adjust seasoning as needed.
  7. Create four wells in the mixture and crack an egg into each well. Season eggs with salt and pepper.
  8. Sprinkle additional Parmesan cheese on top of eggs, careful not to cover yolks.
  9. Bake in the preheated oven for 12-15 minutes, until whites are set and yolks are slightly runny.
  10. Remove from oven and let rest for a few minutes before serving warm.
