For the Stew
  • 2 tablespoons Olive Oil or vegetable oil
  • 2 tablespoons Butter or ghee for dairy-free
  • 2 pounds Top Sirloin Cubes or other beef cut

  • 2 cups Apple Cider do not substitute with vinegar
  • 2 cups Beef Broth or vegetable broth
  • 1 large Onion or shallots for milder taste
  • 2 cups Carrots or parsnips
For the Mashed Potatoes
  • 2 pounds Potatoes Red or Yukon Gold recommended
  • 1/2 cup Milk or almond/oat milk
  • 1/2 cup Sour Cream or Greek yogurt
  • 1 cup Sharp Cheddar Cheese omit for dairy-free
  • 1/4 cup Chives or green onions

Method
 

Cooking Steps
  1. Preheat your oven to 375°F (190°C).
  2. In a large pot, heat a blend of butter and olive oil. Season beef with salt and pepper, then brown in the pot for 6-8 minutes.
  3. Add onion and carrots to the pot and sauté for about 4-5 minutes until the onion is translucent.
  4. Sprinkle flour over the mixture, stir to combine, and cook for an additional 1-2 minutes.
  5. Pour in apple cider and beef broth, bring to a boil, and stir occasionally.
  6. Transfer the mixture to an oven-safe dish, cover tightly, and bake for 1 to 1½ hours.
  7. While the stew bakes, peel and chop potatoes, boil in salted water for 15-20 minutes until tender.
  8. Mash the potatoes with milk, sour cream, cheddar cheese, and chives until smooth and creamy.
  9. Serve the stew over mashed potatoes and enjoy!
