- Preheat your oven to 375°F (190°C).
- In a large pot, heat a blend of butter and olive oil. Season beef with salt and pepper, then brown in the pot for 6-8 minutes.
- Add onion and carrots to the pot and sauté for about 4-5 minutes until the onion is translucent.
- Sprinkle flour over the mixture, stir to combine, and cook for an additional 1-2 minutes.
- Pour in apple cider and beef broth, bring to a boil, and stir occasionally.

- While the stew bakes, peel and chop potatoes, boil in salted water for 15-20 minutes until tender.
- Mash the potatoes with milk, sour cream, cheddar cheese, and chives until smooth and creamy.
